Bill Fitzpatrick used to drive a delivery truck before fulfilling his lifelong dream of opening an ice-cream shop. This dream also stipulated that the shop be in Carle Place (where he grew up and still lives) on Westbury Avenue no more than two blocks from Cherry Lane. So he opened Hollow Creamery.

 

The very comfortable shop has a commitment to coffee (espresso drinks and French presses), baked goods (from Hahn's, Cardinali and Cupcake Contessa) andWi-Fi. But ice cream is the main event, and it is uniformly good. Two flavors of note: an intense banana pudding and a pistachio punctuated by salted nuts, whole and crushed.
