Instead of making cracks about Irish cooking today, I will point out that many of Long Island’s best chefs have Hibernian blood running through their veins.
There are the Durkin brothers, Robert of Robert’s in Water Mill and John of 3½-star Trattoria Diane in Roslyn. Cornelius Gallagher, corporate chef for the Bohlsen Restaurant Group, oversees the kitchens at Tellers Chophouse and Verace in Islip, Prime in Huntington and 2½-star H2O in Smithtown, whose executive chef is Michael Meehan
The 4-star North Fork Table in Southold is run by Gerry Hayden. The Lake House (3 stars) in Bay Shore by Matt Connors, Two Steak and Sushi (3½ stars) in New Hyde Park and Four Food Studio (3 stars) in Melville by James McDevitt.
