Chef Michael Mandleur's preparations include beef carpaccio with Parmesan toast and micro-arugula, paired with the 2006 Laurel Lake Cabernet Franc; miso-glazed and grilled North Atlantic swordfish, with the winery's 2010 sauvignon blanc; confit of Long Island duck with black-pepper fettuccine, haricots verts and cassis-lingonberry sauce, matched with the 2007 syrah; and a lemon-cream phyllo napoleon with raspberries and mint, served with the 2010 gewurztraminer.
