Could Jessica O’Brien be lucky chef No. 13? As of April, she’s running the kitchen of Jedediah Hawkins Inn in Jamesport. She follows Chris Pappademas, who started in late 2016 and left earlier this year.
Since it opened in 2006, Jedediah Hawkins Inn has had a revolving kitchen door. Initially, the kitchen was helmed by noted Long Island chef Tom Schaudel, who now presides over A Lure in Greenport, A Mano in Mattituck and Jewel in Melville.
After Schaudel left in 2009, he was succeeded by Matt Murphy, Steven Lewis, Keith Luce (now at Corbeaux Bakery in Calgary, Canada), Alex Algieri, Lia Fallon (now at Grey Horse Tavern in Bayport), Rich Kanowsky, Craig Attwood (now at East Hampton Point), Kyle Strong Romeo (now at American Beech in Greenport), Stephen Smrcina, Kasia Dabrowska, Pappademas and now, O’Brien.
O’Brien, who lives in Greenport, most recently has been a private chef in New York and on Long Island. Before that she worked at the April Bloomfield restaurants The John Dory and The Spotted Pig, as well as at Le Cirque.
Among the dishes she’s added to the menu is her signature cioppino with clams, mussels, calamari and shrimp ($29). Starting this weekend, she’s launching an a la carte outdoor raw bar.
All of Jedediah’s chefs have cooked from the New American playbook, making use of local products — Crescent Farms duck, North Fork produce in season — whenever possible. Diners have their choice of a formal dining room, a casual glassed-in patio and, in warm weather, outdoor tables that look out on the property’s 22 acres of rural idyll.
Lia Polites, one of the inn’s founding partners, has been the principal owner since 2010. No one at the inn was available for comment on Tuesday.
