Put a little salsa in your weekend. Here are three moderately priced Mexican restaurants that prepare the standards and sometimes add to them, too.

Chichimecas in Farmingdale is an upbeat, colorful spot for flavorful, diverting fare. Recommended: ceviche; choriqueso, or minced chorizo with Oaxaca cheese; breaded skirt steak with potatoes and more; meat-stuffed poblano pepper; enchiladas; flan; tres leches cake.

La Fondita in Amagansett has become a Hamptons staple for its satisfying food and casual style. Recommended: nachos “supremo;” Baja-style fish tacos; burrito with fried cod, chipotle mayo, and pico de gallo; carne asada; and assorted quesadillas and tostadas.

Quetzalcoatl in Huntington serves reliable Mexican cuisine in a town that hosts several winning kitchens. Recommended: choriqueso; shrimp sauteed in tequila and ancho chili sauce; taquitos with chicken; pork or chicken tamales; chili relleno. Same management as Chichimecas.
