Swallow: It’s a bird. It’s what you do when you eat. And it's also the name on the sign over a soon-to-open restaurant in the Huntington space where Kozy Kettle used to be.
Co-owners (married couple) Julie and chef James Tchinnis (he cooked at Bistro 56 in Huntington and Bistro 44 in Northport) have come up with a moderately-priced menu of American regional dishes that skew toward the Southern and Cajun. Expect such dishes as “dirty” (blackened) shrimp and mascarpone Cheddar grits, lump crab hushpuppies with andouille chive gravy and Dr Pepper braised pork belly with pickled watermelon rind and heirloom tomato salad.
