There are only a few tables left at Maize Cantina in Commack this Thursday at 6:30 p.m., when chef-owner Michael Merida will stage a 10-course tasting dinner that draws on dishes he's cooked at some notable places around the world (among them Fat Duck in England, elBulli in Spain and Ryu Gin in Japan).
The price of the meal, at $100 a person, includes wine but not tax or gratuities. Among the dishes Merida will feature will be a hot potato foam with candied bacon and caviar, tuna tartar with avocado weave and lemon-wasabi paper as well as pork pave with corn pudding, asparagus and mango beurre blanc. A chocolate tasting will conclude the meal.
