It's not hard to figure out what draws a mostly Spanish-speaking crowd to Gabino's Diner in Farmingville: the true flavors of Mexico. Dip a house-fried tortilla chip into a bowl of smoked chili-fired salsa and you'll know you're not at the local Taco Bell.
Although the cooling system wasn’t fully functional the night I went, the kitchen seemed to be running on all cylinders. I took great pleasure in a trio of soft corn tacos: tongue (lengua), spiced roasted pork (carnitas) and fiery sausage (chorizo), each showered with chopped onion and cilantro. Also delectable: the "Cubana" torta, a Mexican take on a Cuban sandwich, made with pork, ham, pickle and cheese.
