We’ve seen the Chipotlization of pizza at the various LI locations of PizzaRev, Blaze, Pizza Studio and Piecraft. Now Indian food gets the DIY treatment at Nimbu Indian Grill, which just opened in Bellmore.

At Nimbu (Hindi for lemon or lime), the plate starts with your choice of a base: basmati rice (white or brown), roti (flatbread) or salad. Next up, protein: grilled chicken (tandoori or yogurt-marinated), lamb or paneer (fresh Indian cheese). Vegetable toppings include onions, lettuce, cabbage, carrots or salad. Finally, as many of the five sauces (ranging from mild tikka masala to hot red chili) as you desire. The price is $9.99 for chicken or paneer, $10.99 for lamb.

In the same shopping center as Bellmore’s fine Italian bakery, Spiga, Nimbu is an attractive little restaurant, with a contemporary décor and seating for about 15 people. Free delivery is available for local customers, and the website also offers online ordering and even an ordering app.
