Madame Tong's Redeux (as in redux: brought back, or deux: two, or just remix) opened in Southampton on Friday, lighting up the old Madame Tong's address on Elm Street.
The revival follows the much-publicized exit of Ed Kleefield, whose mini-empire of East End restaurants, including Madame Tong's, collapsed last year. New owners Ian Duke (who runs Prohibition restaurant and bar in Manhattan) and David Hilty continue to offer Asian fare at the retooled restaurant and nightspot.
Diners will find appetizers that include tuna-and-beet tartare, tamarind-glazed spare ribs, shrimp shumai and cold sesame noodles; main dishes such as miso-and-melon glazed halibut, crisp duck breast in a passionfruit, plum and pomegranate sauce; seared tuna with a vegetable stir-fry; and Thai-style chicken, in coconut-lime curry sauce. Sushi rolls also are on the menu.
Madame Tong's Redeux is open Wednesday to Sunday for dinner. Sunday brunch is expected, too, according to manager David Denekas.
