Bistro Eté, which popped up last year in the former site of Robert’s in Water Mill, is expected to reopen nearby in late April.
The new restaurant takes over the address once occupied by Muse.
Bistro Eté is the work of Arie and Liz Pavlou, co-owners and, respectively, chef and manager. Liz said that the menu could focus on what they term “French coastal cuisine,” but with accents that also take in Italian, Greek, and Cypriot. And the Pavlous plan to include vegetarian and vegan dishes.
Arie Pavlou previously owned Coeur des Vignes in Southold, where The North Fork Table & Inn currently cooks. He also was chef at the departed Comtesse Therese Bistro in Aquebogue. His specialties include local striped bass finished with Champagne-truffle sauce, dry-aged steaks, and moussaka made with beets.
And there will be plenty of martinis and mojitos.
