Richard Desmond, who earned three stars at  Public House 49  (as of now unrated),  is the new executive chef at The Wobbly Olive in Hauppauge, which was born yesterday.

Desmond, a talented chef and operatic tenor, described the place as a gastro pub with moderate prices (nothing over $19) and a late-night club scene (live music and DJs).  It  occupies the former home of Pomodorino in an industrial park strip mall that also houses The Grill Room and Umi Sushi.

Desmond’s menu makes for interesting reading: phyllo-wrapped preserved fig with a yogurt terrine and a drizzle of honey ($11), chicken croquette and peach salad ($8),  thin-crust Margherita “pizzotta” (12-inch individual pizza), the "Cenzilla" burger made with ground prime rib and topped with a white Cheddar fondue, romaine relish and tomato jam ($15) and, as an entree, chicken phyllo pie, $15.
