Ristegio's, the much-anticipated New American restaurant with chef Richard Lanza, opens Wednesday at 5 p.m. in North Patchogue.

The restaurant, which takes its name from those of owners Richard, Steven, and Joseph Lanza, is in the location that once housed Pat & Jim's, the chef's first restaurant.

Lanza has earned stellar reviews for his cooking, recently at Blackstone Steakhouse in Melville and the closed North Fork Oyster Company in Greenport and Passionfish in Woodbury.

The general manager of Ristegio's is Andy Kormendi, of the departed Louis XVI in Patchogue, as well as Aureole and The Russian Tea Room in Manhattan.

Ristegio's wide-ranging menu includes starters such as sherried lobster bisque and Maryland-style crab cakes with roasted corn salsa and remoulade sauce; baked flatbreads; main dishes including chile-rubbed pork tenderloin wrapped in bacon, pan-seared Montauk yellowfin tuna with couscous and roasted-pepper vinagrette, and "8hr" braised short rib with parsnip puree; plus traditional sushi and sashimi and sushi rolls.

Dinner appetizers and salads are in the $8 to $14 range; main courses, $18 to $29. The restaurant will be open for dinner from 5 to 10 p.m., and until 11 p.m. on Fridays and Saturdays. Lunch is expected to be offered in about two weeks.
