Star chef Laurent Tourondel's burger-and-shakes spot, LT Burger in the Harbor, officially starts flipping tomorrow.

Tourondel, who recently exited the "BLT" empire of eateries that include his initialed BLT Steak and BLT Fish, offers a moderately priced menu at the bright, new addition to Main Street in downtown Sag Harbor. He has taken  over and retooled the site vacated by Grappa, another casualty in the collapse of Ed Kleefield's Hamptonian group.

On Saturday, the place was attracting plenty of drop-ins, who were sampling LT's assorted coffees, pastries and shakes, in a preview of what's coming up at the bright, retooled address. The huskier stuff debuts tomorrow.

Burgers are in the $8 to $16 range and go from veggie-falafel with spices and hummus to a Snake River Farm American Kobe-style hamburger. The "skinny dip" burger is sans bun; the Mecox-Cheddar burger, with bacon and mushrooms. You can select a spiced-tuna burger, an organic turkey burger, the "LT Backyard" cheeseburger with pickle and mayo, and the "classic hamburger," 7 ounces worth.

The burger-averse can dive into baby back ribs, peel-and-eat shrimp, a lobster roll (market price, of course), chili, nachos, salads and fried dill pickles. The children's menu includes grilled cheese, chicken nuggets and  corn dog. The breakfast club can sample omelets, pastries, sandwiches, French toast, Greek yogurt, steel-cut oatmeal and mocktails.

Those shakes and floats have variety, just in case you're up for a Black Bull (vanilla ice cream, Boylan's root beer) a Dreamsicle (orange sherbet, vanilla ice cream) or a Crazy Nut (hazelnut ice cream, almonds, Nutella). The competition comes from the hot fudge sundae, bananas Foster flambé and chipwich.
