Sugar chef out as Trattachino chef jumps in

Major shake-up on the Nassau County restaurant scene.

At  Sugar Dining Den and Social Club (which earned two stars from Newsday), Joseph Balbo replaces chef Hok Chin, who has left Long Island for Manhattan.

About Balbo: If his name sounds familiar, it's because he recently earned two and a half stars for his inventive small-plate menu at Trattachino in Wantagh. Right now, that restaurant is temporarily closed.

Balbo hasn’t yet instituted a new menu at Sugar, but he's offering a number of small-plate specials and expects to introduce a creative roster of desserts.

So, what will happen to Trattachino, last year home to the short-lived Lounge Burger? Stay tuned for updates.
