From the La Piadineria portion of the Cinelli's menu comes the San Tomasso. Made from prosciutto di parma, roasted peppers, artichokes, fresh mozzarella and arugula with balsamic venegar and italian oil, the piada is a popular flat bread from the Emilia-Romagna region of Italy.
