Peter Gianotti awards three and one-half stars to Southfork Kitchen in Bridgehampton, where chef Joe Isidori’s “intensely focused New American cooking” is showcased in a setting that’s “rich and spare and  industrial and rural.” Favorites include smoked bluepoint oysters with Balsam Farms corn and a North Sea Farms sous-vide egg and “lustrous” Peconic Bay fluke tartare with “Heirloom tomatoes and preserved Meyer lemon.”

In Patchogue, Joan Reminick finds it’s “endless summer” at the surf-themed KB’s Burger Shack. The two-star restaurant, in a century-old building, serves a “thick juicy beefy” Santa Fe burger, terrific mac and cheese with ham, peas and fried onion wisps plus “soul satisfying” meat loaf with mashed potatoes and gravy.
