Huntington vegans now have a menu all their own at Toast and Co. The breakfast and lunch eatery just signed on vegan chef Kay Capra, who has her own station and equipment in the kitchen. Capra is the daughter of owner Brian Carey.
Many items on her menu are also gluten-free. Choices include a creamy cashew corn chowder with cilantro cashew cream ($7.50), gluten-free waffles topped with fruit and whipped coconut cream ($11.95) raw zucchini pasta with avocado pumpkin seed pesto and grape tomatoes ($10.75), a scrambled tofu skillet with sweet potato hash ($11.95) and an heirloom tomato “BLT” featuring avocado, shiitake “bacon,” butter lettuce and basil mayonnaise. Have it on sourdough bread or, if you're gluten-intolerant, a collard green wrap. ($11.75).
Now that the weather is warm, the place offers sidewalk seating out front. Ideal for breakfast time, before the day gets too hot.
