
Truffle dinner at Prime in Huntington

Usually James McDevitt shuttles between the kitchens of Tellers and Verace in Islip, Monsoon in Babylon, H2O in Smithtown and Prime: An American Kitchen & Bar in Huntington. On Friday Feb. 7, he’s staying put at Prime for the evening.
The corporate executive chef for the Bohlsen Restaurant Group — and a Newsday All-Star chef when he was at Four Food Studio in Melville — is pulling out all the stops for a five-course black truffle dinner. Three pounds of Perigord truffles (at $600/pound) are being flown in from France and the chef intends to have his way with them. To wit:
Hamachi sushi with black truffle and caviar
Chilean turbot with black trumpet mushrooms, melted leeks, fingerling potatoes, winter truffles
Dry-aged prime New York strip steak with truffle-crusted potato, baby turnips, Brussels sprouts, truffled Bordelaise sauce
Cowgirl Creamery Mt. Tam triple-cream cheese with fresh honeycomb, quince paste, truffle, pinenut brittle
