There are plenty of fixed-price menus around, but few are as much fun as the one you put together at Muse in Water Mill.
In full, this is Muse Restaurant & Aquatic Lounge, chef Matthew Guiffrida's whimsical, full-flavored eatery. The $29.95 fixed-price production is available all night on Sunday, Monday, Wednesday and Thursday; and until 6 p.m. on Friday and Saturday.
Guiffrida's appetizer include mini-tacos with duck confit, savory crab-cocktail cones, apple-smoked pulled-pork zeppole (yes, stuffed doughnuts) and the quartet of "Not Ya Mama's Meatballs," one each of the Asian, Swedish, Italian and Thanksgiving variety, that last one finished with cranberry and caramelized onion.
Main courses are sparked by a riff on Wiener schnitzel made with swordfish, jerked duck au poivre, and a pork trio that goes from pulled pork and johnny cake to extra-thick bacon and teriyaki-cider braised pork belly.
