Insomnia Cookies opens in Babylon, its second Long Island location

Long Island night owls with a sweet tooth now have somewhere new to go in Babylon, with Insomnia Cookies opening in the village.
The fast-growing chain's second Long Island location is located at 55 Deer Park Ave. It's now open until 3 a.m. Thursdays through Saturdays and until 1 a.m. the rest of the week.
The Island's first Insomnia Cookies opened near Hofstra University in 2024.
"Our new Babylon bakery serves as continuation of our expansion into the Long Island market to serve more Insomniacs in this region," Matt Sandelands, real estate manager for Insomnia Cookies, said in a statement. "Our expansion strategy is intentional and proven — starting in college towns, moving into urban centers, and scaling into suburban markets."
Asked whether more local locations would be forthcoming, Sandelands said the chain "would love to grow the Insomniac community here on Long Island."
The company will be hosting a grand opening event for the Babylon bakery on Saturday starting at noon.
Retail analysts said the privately owned cookie business has been undergoing a major expansion. To date, the chain has more than 350 locations across the United States, Canada and the United Kingdom, according to a company announcement last fall.
"Insomnia is a fast-growing chain, and continues to drive double-digit sales and unit growth," Donna Hood Crecca, senior principal at Technomic, a Chicago-based restaurant industry analysis firm, said in an email to Newsday.
Retail analyst Neil Saunders said the company’s growth has been supported by an injection of investment from private equity groups.
"Supported by investment, Insomnia Cookies has been on a growth tear and has been opening an extensive number of new stores," said Saunders, managing director of GlobalData, a firm based in Manhattan.
Last year alone, the company opened 55 locations and plans to open another 75 bakeries in 2026, the company said. Long term, the company said it plans to have 1,800 bakeries worldwide over the next decade.
