I like my grandma’s chicken soup because it has a lot of noodles and chicken. It is great to have for dinner on a cold, rainy day. My grandma makes me some when the weather gets colder. I always look forward to a big bowl of her soup.

GRANDMA’S CHICKEN-NOODLE SOUP

6 tablespoons olive oil

1 small chicken, cut up

Salt and pepper, to taste

1 large onion, peeled and diced

4 carrots, peeled and sliced

3 ribs celery, chopped

2 sprigs parsley

2 quarts water

1 chicken bouillon cube

1 (16-ounce) package pasta noodles

1. Brown the chicken pieces in a large pot using 6 tablespoons of olive oil and season with salt and pepper.

2. After the chicken is brown, add all the cut vegetables and cook for a few minutes on medium heat.

3. Add water and bouillon. Bring to a boil then reduce heat to simmer for about 90 minutes.

4. Cook noodles separately and then add to soup. Serve and enjoy.
