In my ongoing quest to find tasty, kid-friendly meals for you that are healthy and appropriate for the whole family, this week I chose a fun, Halloween-inspired after-school snack. I found the recipe in "Little Aliens Cookbook," by Zac Williams (Gibbs Smith; $14.99).
UFOS (Unidentified Flatbread Objects)
(Makes 8 servings)
-8 flatbread rounds or pitas
-2 large avocados, peeled and mashed (2 cups prepared mashed avocado may be substituted)
-1 teaspoon lemon juice
-1 tablespoon taco seasoning
-1/4 cup sour cream
-1 cup shredded Cheddar cheese
-1 small tomato, seeded and diced
-1/2 cup black olives, cut in half
1. Preheat oven to 425 degrees. Line two baking sheets with foil.
2. Using clean scissors, cut the flatbread rounds into flying saucer and alien shapes. Discard leftover bread. Place shapes on baking sheets and bake for 10 to 12 minutes, until light brown. Remove from oven and let cool.
3. Mix mashed avocado with lemon juice, taco seasoning and sour cream. Spread avocado mixture over each flatbread shape and top with cheese, tomatoes and olives.
