Feeding the kids: Family-friendly cobb salad

In my ongoing quest to find tasty, kid-friendly meals for you that are healthy and appropriate for the whole family, this week I chose a healthy, kid-friendly version of a traditional Cobb salad. I found the recipe in "Parents Magazine Quick and Easy Kid-Friendly Meals: 125 Recipes Your Whole Family Will Love" (Wiley Paperback; $19.99).
Kiddie Cobb
(Makes 6 cups)
Ingredients
-2 cups chopped red-leaf lettuce
-1 cup diced roast turkey, about 1/3 pound (use one thick slice from the deli)
-1 ripe avocado, cut into chunks
-1/2 cup halved red grapes
-1/3 cup chickpeas
-2 reduced-fat Cheddar cheese sticks, cubed
-1 tablespoon honey mustard salad dressing
Directions
1. Place lettuce on a serving platter.
2. Line each of the remaining ingredients diagonally on top of the lettuce, starting with turkey in the center.
3. Serve with the dressing on the side.
