In my ongoing quest to find tasty, kid-friendly food appropriate for the whole family, this week I chose an easy dinner idea. I found the recipe on the entertaining website Hostess with the Mostess.

Family Friendly Flatbread Tacos
(Serves 12)

- 1 package Krusteaz Garlic & Onion Flatbread Mix (or a similar brand of prepackaged mix)
- 1 teaspoon vegetable oil
- 1 pound lean ground beef or ground turkey taco seasoning
- 3/4 cup water
- 2 cups shredded Monterey Jack cheese
Optional Taco Toppings:
- cheddar cheese
- sour cream
- mild salsa
- shredded lettuce
- black olives, sliced
- tomato, diced


1. Preheat oven to 475º F.
2. Prepare the flatbread mix according to the package directions and let dough rise.
3. While dough is rising, heat 1 teaspoon oil over medium-high heat in a skillet. Add the ground beef to the skillet, using a wooden spoon to break up the meat until well browned and crumbled. Drain the excess liquid from the pan. Add taco seasoning and water and simmer until thick. Remove from heat.
4. Divide the flatbread dough into approximately 12 small balls that are roughly the size of a golf ball. Place 2-3 dough balls at a time onto a prepared baking pan, and flatten them out into thin circles.
5. Spread a thin layer of ground beef onto each circle of dough. Top the beef with a small handful of Monterey Jack cheese.
6. Bake for approximately 5 minutes. Be careful not to overcook the flatbreads, as softer dough will be easier to fold in half.
7. Remove from oven and serve on individual plates to allow for custom taco toppings. Fold in half or cut into triangles before serving.
