In my ongoing quest to find tasty, kid-friendly food appropriate for the whole family, this week I chose a creative, kid-friendly twist on a traditional salad. I found the recipe in "Dora and Diego Let's Cook," by Nickelodeon (Wiley; $16.95).
BackPack's Salad Bundles
(Makes 4 servings)
Ingredients
-1/3 cup low-fat sour cream
-1/4 cup salsa
-2 romaine leaves
-1/2 red sweet pepper, cut into thin strips
-4 inches of a seedless cucumber, cut into thin strips
-1 carrot, cut into thin strips
-1/2 cup thin strips of jicama
Directions
1. In a small bowl, combine sour cream and salsa. Divide among four small bowls.
2. Cut romaine leaves in half lengthwise and remove the center rib.
3. Lay one-fourth of the vegetable strips across the end of one lettuce leaf. Roll up and place on a plate, seam side down. repeat with remaining vegetables.
4. Serve each with a small bowl of dressing.
