The desire for new school supplies in September never quite goes away. These days I channel it into my kitchen. Instead of pens and pencils, I crave slotted spoons and balloon whisks. Spiral-bound notebooks and lunchboxes have been displaced by sheet pans and roasting racks.

This is the time of year for restaurant supply stores and, not long ago, I discovered a new one: Premium Supply Co., just across Grand Boulevard from Tanger Outlets in Deer Park. Premium was founded by Jay Pattinger in 1990 and has grown from a small storefront with one truck to a 42,000-square-foot facility that designs and supplies commercial kitchens in some of Long Island's most exclusive restaurants, among them Jewel in Melville, Prime an American Kitchen & Bar in Huntington and the new Scarpetta Beach in Montauk.

Premium provides everything that a restaurant needs -- appliances, equipment, paper goods, stemware, cutlery, cleaning supplies. Said Pattinger, "We handle everything from soup to nuts -- except no soup and no nuts."

For the home cook, Premium is a playground of professional tools selling at beyond-fair prices. A heavy-duty balloon whisk is $2.60, an oven-safe 8-inch Winco nonstick skillet is $17.99, a 9-inch Dexter offset serrated knife is $21.95. And these are items I need. I had to restrain myself from buying a burger-steaming dome, a 1,000-count bag of plastic steak doneness markers, a stack of coat-check tickets and a pretty wooden children's booster seat.

Premium Supply Co. is open Monday to Friday 9 a.m. to 5 p.m., on Saturday from 10 a.m. to 1 p.m.
