I've got to use up all these sweet, juicy tomatoes before they begin to rot. That would be catastrophic, so today, we're making bacon, basil and tomato sandwiches, a twist on the classic BLT.

It's easy enough: I sliced a Big Boy tomato while the pre-cooked bacon warmed in the microwave. I'm a sucker for shortcuts -- but only if they don't affect the final product -- and, in my opinion at least, precooked bacon is indistinguishable from fresh bacon, which makes a mess of your stove or microwave and needs constant supervision while it cooks. No, thank you.

I'm also big on fiber, and I love whole wheat bread. But seriously, a BLT or a BBT requires white bread, so I compromised and used whole wheat white, and spread mayo over one slice.

Next, I topped the mayo with basil leaves to cover the entire surface of the bread, and topped that with four slices of bacon, arranged side-by-side. Next came two thick tomato slices, topped with a second slice of bread.

This is absolutely sublime, with the herbal basil flavor complementing the moist sweetness of the  tomato, but the best part is the unexpected crispness of the bacon.

So good.
