Koban Japanese, a fixture on Merrick Road since 2004, has been transformed into 6 Elements Asian Cuisine & Bar. The owners, led by Tommy Cao, are new, but the menu remains a blend of American-style sushi and pan-Asian cooked food.

Appetizers ($5 to $11) range from gyoza, shumai and chicken lettuce wraps to Indian pancakes and Thai vegetarian spring rolls.

Kitchen entrees ($110 to $23) include General Tso’s chicken, Indonesian sambal sauce with choice of meat, pad thai and salmon teriyaki. Sushi entrees run from $14 for maki combo to $53 for sushi-sashimi combo for two.

The inevitable Merrick roll ($14) contains spicy tuna, salmon, yellowtail caviar, seaweed salad, crab meat and avocado and is topped with tuna, salmon and yellowtail.

The name, a server said, refers to the six elements of taste: sweet, salty, sour, spicy, bitter and fresh.
