Archaeological evidence tells us that noodles were being eaten in China at least 4,000 years ago, so it hardly comes as a surprise that Asia has a long-established way with the genre.
On Long Island, Asian restaurants keep the tradition going strong. Here are three places to twirl your chopsticks and slurp happily.
The roast pork noodle soup at this counter service eatery makes for a most fulfilling meal. There's peppery broth, baby bok choy, thin rice noodles and lots of juicy, smoky hunks of roast pork. ($6.95)
Despite the presence of sushi and some fusion dishes, this is, at heart, an old-school Chinese restaurant where cold noodles involve fresh pasta in a smooth and lively sesame-peanut sauce. ($6)
This Japanese restaurant does a first-rate rendition of yaki udon, a savory stir-fry of fat noodles, chicken and vegetables. ($10)
