Almond, the three-star French-American bistro in Bridgehampton, hosts a dinner pairing duck and Long Island wines on Thursday. Cost: $75. The dinner starts at 7 p.m.

The matches by chef Jason Weiner include duck dashi, or stock, with sunchokes and scallions, with the 2012 Paumanok Vineyards Cabernet Franc; duck prosciutto and torchon of foie gras with compressed pineapple and mustard, with the 2012 Channing Daughters Blaufrankisch; duck confit ravioli, with red-curry squash and quail egg, with the 2008 Channing Daughters MUDD red blend; duck breast, baby beets and pistachios with the 2010 Paumanok Merlot; and a "P.B. & J" parfait grape sorbet with Paumanok's vin rose.

At the reception before dinner, you may sample an Almond version of the Negroni cocktail, made with Channing Daughters Vervino Variation vermouth.
