Bay Shore: How to make an ice cream soda

It’s not just about the ice cream — it’s also about what you do with the ice cream. At Coyle’s in Bay Shore, I watched as my young server made a textbook ice cream soda. Usually I can’t bear to watch an ice cream soda being made; the soda jerk in question invariably lives up to his or her moniker. This young woman knew exactly what she was doing, and when I peeked behind the counter, I learned why: These clear instructions were posted:
3 fingers of milk
Seltzer added ¾ way
2 pumps of syrup (vanilla or chocolate)
Stir briskly
Add 2 scoops of hard ice cream or add soft serve
Put dome lid on
Ask customers if they want whip cream
Would that every Long Island ice cream parlor paid this kind of attention to detail. Also posted were instructions on egg creams, shakes, etc.
