Ben & Jerry’s constantly introduces new ice cream flavors, but now the company has come up with a new concept: the Core. Each Core pint contains two flavors separated by a firm filling of fudge, jam or caramel.

February brings four Cores:

Hazed & Confused: chocolate and hazelnut ice creams with fudge chips and a hazelnut-fudge core

That’s My Jam: raspberry and chocolate ice creams with fudge chips and a raspberry core

Peanut Butter Fudge: chocolate and peanut butter ice creams with mini peanut butter cups and a peanut butter fudge core

Salted Caramel: sweet-cream ice cream with blonde brownies and a salty caramel core (This last variety only has the one ice-cream flavor.)

When it comes to serving, using a scoop won’t capture the configuration of the container — the two flavors side by side, a cylinder of filling tunneling down the bulleye. I’d be more inclined to lay the pint on its side and, using a heavy knife, slice right through the cardboard so that everyone gets a perfect ring. If you don’t finish the whole pint, cover the exposed top with plastic wrap and pop back into the freezer.
