They’ve got a fine lineup of regular burgers at Bobby’s Burger Palace, but every month brings a special. December’s burger of the month, I learned Thursday at Bobby’s in Lake Grove, is the brunch burger, topped with American cheese, smoked bacon and a fried egg.

Man, was this a good burger. You know what’s rare at most burger chains? The possibility of getting your burger cooked to order. I ordered mine medium-rare, and that’s exactly what I got ($8.25). The cheese was perfectly melted, the bacon was crisp but not burned, while the egg, I have to say, was a little overdone. When I cut into the yolk, it failed to run. The waiter noticed this and immediately offered me a do-over, which I declined. It was still delicious. Also, the fries were perfect. I’ve gotten to the point where I actually prefer Bobby’s fry sauce (mayonnaise with roasted red pepper and chipotle) to ketchup.

About three years ago, Bobby’s Burger Palace posted the recipe for the fry sauce. Here it is:

BBP FRY SAUCE

½ cup prepared mayonnaise
1 small red pepper, roasted, peeled, seeded and diced
1 chipotle chili in adobo
Salt and freshly ground black pepper

Combine all ingredients in a food processor and process until smooth. Transfer to a bowl, cover and refrigerate for at least 1 hour to allow flavors to meld. Makes about ½ cup.
