Can a single human being be two places at once? Eddie Thretipthuangsin expects to come close. As executive chef at the new (3-star rated) Asian Bistro Next Door in Woodbury, the guy has enough to keep him busy. But this Friday, Thretipthuangsin, along with his mother, Pat and brother, Chris, expect to launch M & E Tapas in Bridgehampton for the summer season.
The place had a brief run between Halloween and Christmas of last year, when it made its debut. Now, it’s reopening with a menu Thretipthuangsin described as a combination of Low Country Southern, Floridian and Southwestern small plates and entrees. Add to that an Asian vibe, thanks to his Thai roots.
Thretipthuangsin’s menu will optimize local ingredients (especially seafood) in such dishes as fried oysters with chipotle aioli and grilled swordfish with mango salsa. Shrimp and grits will be a specialty.
