Chef to CIA grads: 'Know your goal'

Cornelius Gallagher has joined Islip-based Bohlsen Restaurant Group as corporate chef. The Garden City resident was with Sonnier & Castle in Manhattan as executive chef. Cornelius Gallagher, a top Long Island chef and Garden City resident, delivered the commencement address at The Culinary Institute of America, advising future cooks to "know your goal and plan your path to that goal."
Gallagher, named one of the "10 Best New Chefs in America" by Food & Wine magazine while at Oceana in Manhattan, graduated in 1994 from the institute. He told the graduates, "If you want to be a great chef, work for the best chefs in the world."
Gallagher is corporate chef for the Bohlsen Restaurant Group, which includes Tellers Chophouse and Verace in Islip, Prime in Huntington and H2O Seafood Grill in Smithtown.
