Back in 2005, archaeologists in northwestern China came upon a remarkably preserved earthenware bowl filled with noodles; they were about 4,000 years old.

This much we know: Chinese noodles have withstood the test of time.

In these parts, popular noodles include lo mein, thin wheat flour egg noodles and chow fun, wide flat rice noodles.
