East Islip: Verace cooking demo this Sunday

Francesco Torre, executive chef at Verace in Islip, will be at Organics Today Farm in East Islip on Sunday to demonstrate a butternut squash soup. Torre uses as much produce as he can from Organics Today. Right now, in addition to butternut squash, he is availing himself of the squash blossoms, eggplants and broccolini. The soup he plans to make is a very simple puree, but it will be garnished with the meat-and-cheese tortellini that Torre learned to cook from his grandmother.
If you have never been to Organics Today, you owe yourself a visit. I profiled Michael Massino’s farm back in May and found it a ray of organic sunshine located on “three acres on a dead-end street in a suburban subdivision, nestled in a corner created by a Southern State Parkway overpass and the LIRR tracks.”
