Hot dogs with pineapple salsa and chipotle mayonaise
For salsa
1 (8-ounce) can pineapple slices in juice, drained and diced
2 tablespoons finely chopped red onion
2 tablespoons finely chopped fresh cilantro
1/2 clove garlic, finely chopped
1 tablespoon lime juice
Salt
For mayonnaise
1/4 cup mayonnaise
1 chipotle chili in adobo, finely chopped
1 teaspoon lime juice
4 cooked hot dogs
4 toasted buns
1. Make salsa: Combine pineapple, onion, cilantro, garlic, lime juice and salt to taste in a medium bowl.
2. Make mayo: Combine mayonnaise, chili and lime juice.
3. Spread some mayonnaise on one side of each bun, place hot dogs in buns and top with salsa.
