Sometimes weeknights just call out for a pasta thrown together with staples from the fridge and pantry. Don’t have roasted peppers? Throw in frozen peas. No mascarpone? Use Brie or blue cheese. Olives, capers, canned tuna, whatever is still sporting a future expiration date will do. To drink, keep one of these wines in stock.

2015 Terre di Gioia, Sauvignon Blanc, Friuli Grave, Italy This is a clean and simple wine that would be great for everyday drinking and to have in the refrigerator for any casual dinner — perfect for any thrown-together pantry pasta. With aromas of lemon peel, green peppers, freshly cut grass and a touch of yellow apple.

2015 Gancedo Capricho Val de Paxrinas Godello, Bierzo, Spain From an up-and-coming region in northern Spain, this little gem is made mainly of godello, with a touch of dona blanca blended in. Ripe aromas of pear, white flower and a hint of sage add a wonderful level of depth to the expansive yet bright palate. The wine’s richness will stand up well to cheese in your pantry pasta, while more savory notes and ripeness will counter capers’ saltiness if you are using them.

2010 Henriet-Bazin Cuvee Marie-Amelie Blanc de Blancs Brut, Montagne de Reims, Champagne, France This wine is made of 100 percent chardonnay, from distinctly chalky soils and in small production. With aromas of hazelnut, chalk, white pepper, peppermint and a hint of sea salt on the palate, this sparkler will be a wonderful complement to a savory dish. The wine’s acidity is brisk and will balance any richness in your sauce.
