Since the Fourth of July falls midweek this year, you should start celebrating early. Here are three all-American eateries that know how to ignite fireworks -- on the plate.

The Lake House in Bay Shore offers excellent American cooking, service to match, plus a water view. Among the winning dishes are littleneck clam chowder, Long Island duck breast with duck-and-fruit sausage, herb-roasted chicken with honey-roasted onions, pan-seared tilefish with smashed red potatoes and cinnamon doughnuts.

Luce & Hawkins in Jamesport has a good-lookin' setting in the Italianate-Victorian Jedediah Hawkins Inn. From the ever-changing menu: fish tacos, lobster roll, shrimp-and-lobster meatballs, North Fork duck wings with cucumber-feta raita, sausage pierogi, heritage pork tenderloin, Cheddar biscuits.

Ruth's Chris Steak House in Garden City is the local link in the national chain. It's a destination for filet mignon, strip steak, porterhouse, rib eye, lobster, barbecued shrimp and the crab cocktail with Creole rémoulade. Banana cream pie and cheesecake, too.
