Georgio's in Farmingale: the latest in coffee

It’s never quick when I stop into Georgio’s Coffee Roasters for a pound of beans. Either Georgio Testani has just received a shipment from some remote plantation in the Republic of Burundi, or he’s trying out some fascinating new contraption.
Today he and his wife Lydia were experimenting with the Bunn Trifecta. This is a stout little machine that .?.?. well, here’s how Bunn, the coffee-equipment manufacturer, puts it: “With Trifecta, the barista creates an experience which unlocks the nuances of your coffee. Using an air infusion single cup process, trifecta brews so that each coffee’s unique voice resonates.“
OK, then. Testani ground some Kenya Thika beans and then poured them into the capsule. He started reading off the words that flashed on the LCD display: “pre-infusion, turbulence on, turbulence off, volume, pre-wet, fill pause, hydrolysis, extraction time.“
It took a while for the machine to get going, but over the next few minutes, we could see a chamber fill with liquid, get all bubbly, settle down, then get all bubbly again. Finally, the coffee streamed out. Testani, who had been experimenting with different settings and temperatures for days, pronounced it the first great cup he’d made. I thought it was delicious but what do I know?
Already at Georgio’s you can get your coffee drip-brewed, cold-brewed, espresso-pulled or siphoned (and one of the siphons is halogen-powered). Now this. He joked that this new method was little more than “a glorified $3,500 French press,” but I could tell that he was warming to it.
