If you're at a loss about what to eat when dining out during Passover, here's what just may be the ultimate fusion dish: matzo lasagna. You'll find it at the Glen Cove Diner, where it's being offered as a special throughout Passover week.

“It’s a family tradition,” said co-owner Byron Voutsinas, who said the recipe is from his girlfriend, whose mother and grandmother are Jewish and whose father is Italian.

The matzo sheets are first softened in water and then used in lieu of noodles, layered with marinara sauce, ricotta, mozzarella and Parmesan.

The dish, which is also vegetarian but not kosher, is part of a full-course dinner that, at $19.95, includes soup or salad as well as a glass of wine, and, for dessert, chocolate-covered matzo, along with coffee or tea.

Other Passover dinner specials: slow-cooked beef brisket ($24.95) and herb-crusted roast half-chicken ($19.95). And matzo brei ($8.95) is featured at breakfast year-round.
