Greenlawn: Striking it rich at Goldmine Mex Grill

It had been ages since I’d eaten at Goldmine Mexican Grill in Greenlawn, where I stopped in for a quick bite last night. The little counter service eatery (with a fresh salsa bar) has been open since 1997.
From what I could observed, it's popular as ever. Chef-owner Dave Bermejo, doing all the cooking behind the counter, looked like a veritable whirlwind as he tried to keep up with incoming orders.
I rediscovered an old favorite, Bermejo’s tarragon-scented chicken stew, made with boneless white and dark meat poultry. Ordered as a platter (actually, a compartmentalized plastic tray), the stew was ladled over basmati rice. Also part of the presentation: a flour tortilla, black beans and pico de gallo atop lettuce. Simple, flavorful and, at $8.99, truly inexpensive.
