 <p>Established in 2026, 3 Sons Ice Cream was the logical next step for Rock Massa, whose 3 Sons Delicatessen (2019) and 3 Sons Pizza Kitchen (2022) flank the storefront that had been a dry cleaner. Rock's youngest son, Frank, has developed into an accomplished craftsman whose goal is consistency. “Every bite needs to be the same,” he explained. “You can’t have lots of inclusions [industry-speak for mix-ins] in one part of the tub and then no chips in another.” He uses real coffee for the coffee ice cream, Bordeaux cherries for the black cherry, Dutch process cocoa for the chocolate, dark chocolate Barry Callebaut chunks wherever chips are called for. There are always about 35 flavors on offer (including dairy free and no sugar added) to be enjoyed in cups, cones, sundaes and shakes.</p>

 <p>The Ice Cream Chick, which succeeds Herrell's Ice Cream, is descended from Long Island ice cream royalty. Owner Christine Cairo is a veteran of Krisch’s in Massapequa and is married to Paul Cairo (another Krisch’s alum who now owns Strong Island Ice Cream in Nesconset). She’s found a less-traditional ice cream culture in Huntington than she knew in Massapequa. Accordingly, she has introduced Twinkie (pound cake and pools of marshmallow crème) and chocolate mint cream (with green-hued buttercream and crushed Andes chocolate mints). The only holdovers from Herrell’s are the beloved chocolate whipped cream and the genuine chocolate (not chocolate-flavored) Guittard sprinkles. One item lifted directly from Krisch’s is the monumental “kitchen sink” sundae containing 10 ice creams, three toppings, two bananas, waffle wedges, whipped cream, sprinkles and cherries.</p>

 <p>A North Fork standard&nbsp;since 1953, Snowflake's flavors follow the North Fork's fruit harvest. The summer starts with strawberries and ends with peaches. Try either fresh fruit topping with your favorite flavor ice cream from the list of classics or the flavor of the week, or be a seasonal-fruit purist: strawberry ice cream with strawberry sauce, peach with peach. But the shop's most famous flavor knows no season:&nbsp;Peconic Swamp Thing is&nbsp;a mixture of chocolate ice cream with fudge, brownies and raspberry swirl. It was introduced as a flavor-of-the-week in 1989, the year after Carolyn and Stu Feldschuh bought the shop, and they have been unable to take it off the menu since.</p>

But nothing compares to the pleasure she gets from watching her patrons sample the fruits of her labor. This is a second time around for Termini, who owned a Ben &amp; Jen’s ice cream shop here from 1999 to 2003. She sold that business when it began to compete with her young children for attention; now that they are grown, she has come back. The focus of the cheerful, freestanding store is ice cream, more than 40 flavors — plus shakes, sundaes, floats, arctic blasts (soft-serve swirled with toppings), cakes and&nbsp;ice cream novelties (premade confections that you pluck right from the freezer).</p>
