There always seems to be something new coming out of the kitchen at Toast and Co. in Huntington, a go-to spot for breakfast.

On a recent morning, I tried the restaurant’s new signature egg scramble. Chef Erick Diaz’s lava skillet ($11.95) featured Tabasco-spiked scrambled eggs with herbs, jalapeño chorizo and sweet potatoes. The potatoes were a bit blackened, but to no disadvantage. The dish was  presented in a big metal fry pan.  A lot of color and flavor — and a lot of food.
