Panama Hatties, which recently was sold, is undergoing major renovations. But the restaurant remains open and will offer a $65 fixed-price dinner on Valentine's Day.

Owner George Echeverria, formerly of Soigne in Woodmere, said he expects the overhaul to be completed by the end of the month, when new menus also will be in place.

The three-course Valentine's Day menu includes appetizers such as Soigne's onion soup gratinee, pink shrimp-and-chorizo sausage etouffee, smoked duck quesadilla, housemade lobster ravioli and, for a $10 supplement, Hudson Valley foie gras with honey-roasted apples and blackberry brandy. Main dishes include pistachio-crusted St. Peter's fish, braised New Zealand lamb shank, pan-roasted Black Angus filet mignon, roasted Long Island duckling with raspberries, and rack of lamb. There will be an individual dessert sampler plate. A long-stem rose is included, as are chocolate truffles.
