If you want in on a secret in Greenport, there’s an under-the-radar menu for those in the know. At Industry Standard, chef Greg Ling offers a short list of secret dishes when the mood strikes him — so it’s only available on occasion.

To find it, you have to head to Instagram to the restaurant’s handle, @industrystandardkitchen. Open the app when you get seated, and let the server know what you’d like to order.

Like any secret, it’s not something to discuss in the open. Don’t call and ask about it unless you want the “What secret menu?” response.

Last week’s secret menu offered “oysters Gregafella,” with roasted Peconic oysters, sambal butter, ramp vinaigrette and bacon ($10); chicken wings and waffles with a maple chili soy glaze ($14) a lil’ pork chop banh mi ($16) and blueberry cobbler ($9).

Why have a secret menu, besides the fact that it’s kinda fun? Ling says his primary menu is comprised of “dishes I’d like to eat,” he said. Specials — like the Southern-style watermelon salad, grilled lamb chops and the prime steak burger — point to more limited ingredients. The secret menu offers one-offs, more out-there or hard-to-get ingredients — a fisherman’s fresh catch, or the first strawberries of the season.

The secret menu courts adventurous diners, loyal customers or in this case, especially attentive social-media fans. Over the past few years, secret menus at places like Momofuku and Le Bernardin in Manhattan and Paulie Gee’s in Brooklyn have become so popular that an app was created to track them in major cities across the country.

Fast food places followed suit, with Shake Shack offering a secret peanut butter bacon burger and Burger King selling an off-menu order that’s half fries, half onion rings.

Industry Standard is open 5 to 10 p.m. Monday through Thursday, 5 to 11 p.m. Friday, noon to 11 p.m. Saturday and noon to 9 p.m. Sunday.
