Chef Greg Ling has returned to Greenport with a new venture, Industry Standard. The casual, low-priced restaurant takes over the Front Street space that was previously Front Street Sushi and, before that, Farmhouse and Fifth Season.

Ling said that the food “is based on the kinds of things I want to eat — and can afford.” He’ll be changing the menu on a weekly basis but it will always be composed of dishes small (such as fried olives with charred lemon aioli, $6) medium (hot “wangs,” $12), large (pork-belly banh mi, $14) and extra-large (Southern fried chicken with biscuit, slaw, mac ’n’ cheese and greens for two, $25). Standard at the Standard will be the 4-ounce burger ($5) and “Donkey’s style” cheesesteak on a Kaiser roll ($15).

Ling started his Long Island journey cooking just down the street at Greenport’s Frisky Oyster. He went on to be the opening executive chef at Dennis McDermott’s The Riverhead Project in 2011 and, for a few months in 2013, executive chef at Keith Luce’s Main in Greenport’s Stirling Square.

Industry Standard, he said, would provide a late-night watering hole for the village. During the winter the kitchen will be open Wednesday and Thursday 4 p.m. to midnight, Friday 4 p.m. to 1 a.m., Saturday noon to 1 p.m., Sunday noon to 10 p.m. The bar will be open even later. In the spring Ling plans to open for lunch and dinner seven days a week.
