SALT, a New American restaurant with seafood specialties, is slated to open on Memorial Day weekend at the waterfront site in Merrick vacated by The Boathouse.

The newcomer is an offspring of Parlay, a gastropub, and Mesita, a Mexican restaurant, both in Rockville Centre. It isn’t connected with SALT Waterfront Bar + Grill on Shelter Island.

“The restaurant is still in the works,” said Jessica Matarese, who directs marketing and events for SALT, Parlay and Mesita. Menus and prices haven’t been finalized, and there’s no telephone number yet.

The Boathouse was known for its casual fare, marina and deck. Before housing The Boathouse, the 3000 Whaleneck Rd. spot was occupied by Cucina Bay.
